Easy Taco Casserole Recipe

Contributor’s Note: “Growing up, Taco Tuesday was a big deal in our house. My mom would always make something fun, and this taco casserole was my favorite. Now, I make it for my own family, and it brings back so many great memories!” – Jessica R.

Ingredients:

• 1 lb ground beef (or ground turkey)
• 1 packet taco seasoning
• 1 can (10 oz) diced tomatoes with green chilies
• 1 can (15 oz) black beans, drained and rinsed (optional)
• 1 can (15 oz) corn, drained
• 1 cup salsa
• 1 ½ cups shredded cheddar or Mexican blend cheese
• 1 bag (9 oz) tortilla chips or crushed Doritos
• ½ cup sour cream (optional, for topping)
• ¼ cup chopped green onions (optional)
• ¼ cup sliced black olives (optional)

Instructions:

1. Preheat oven to 375°F (190°C).
2. Cook the beef in a large skillet over medium heat until browned. Drain excess fat.
3. Add taco seasoning and ½ cup of water. Stir until combined.
4. Mix in diced tomatoes, black beans (if using), corn, and salsa. Simmer for 3-5 minutes.
5. Layer the casserole: In a greased 9×13-inch baking dish, spread a layer of crushed tortilla chips.
6. Add the beef mixture on top of the chips.
7. Sprinkle cheese evenly over the top.
8. Bake for 15-20 minutes until the cheese is melted and bubbly.
9. Serve hot with sour cream, green onions, and black olives on top.
